My much requested chicken hash. Simple and fresh ingredients bring out amazing flavor.
1 chicken breast, cooked and diced
2 medium potatoes, finely diced
1-2 parsnips, diced
1 small bunch of kale, chopped
1 large shallot, diced
3 cloves of garlic, minced
garlic powder (to taste)
onion powder (to taste)
redfish seasoning, chili powder, paprika (to taste, use one or all)
salt and pepper to taste
1/2 cup heavy cream
Saute shallot and garlic over medium heat for 1-2 minutes in olive oil or butter.
Add the other seasonings and cook for 1-2 minutes.
Stir in the potatoes and parsnips, and cover and cook until soft.
About 10-12 minutes.
Add cooked chicken and cook for another minute or so.
Stir in the cream and mix until it has thickened into a heavy sauce.
Add salt and pepper to taste and enjoy!
