My much requested chicken hash. Simple and fresh ingredients bring out amazing flavor.


  • 1 chicken breast, cooked and diced

  • 2 medium potatoes, finely diced

  • 1-2 parsnips, diced

  • 1 small bunch of kale, chopped

  • 1 large shallot, diced

  • 3 cloves of garlic, minced

  • garlic powder (to taste)

  • onion powder (to taste)

  • redfish seasoning, chili powder, paprika (to taste, use one or all)

  • salt and pepper to taste

  • 1/2 cup heavy cream


  1. Saute shallot and garlic over medium heat for 1-2 minutes in olive oil or butter.

  2. Add the other seasonings and cook for 1-2 minutes.

  3. Stir in the potatoes and parsnips, and cover and cook until soft.

  4. About 10-12 minutes.

  5. Add cooked chicken and cook for another minute or so.

  6. Stir in the cream and mix until it has thickened into a heavy sauce.

  7. Add salt and pepper to taste and enjoy!
