A dish full of flavor and easy to make. It pairs well with an aged parmesan.


  • 2 cups of mashed sweet potato

  • 1 cup of arrowroot powder

  • ½ cup garbanzo bean flour

  • pinch of salt


  1. In a bowl, mash the sweet potato (preferably warm).

  2. Add the arrowroot powder ¼ cup at a time mixing thoroughly. At the last ¼ cup you may need to start kneading with your hands.

  3. Knead in the garbanzo bean flour. Form into a ball and split in fourths.

  4. Roll the dough into a long ¾-1 inch thick rope.

  5. Cut into 1 inch segments.

  6. Score with a fork.

  7. Saute, boil or store.
